Because who doesn’t love burritos?! A traditional taco or burrito night in the RV can get messy and take up lots of space with all the a la carte toppings. This take on it combines everything into one pot and is just as tasty as ever. As with many Instant Pot recipes, the process is simple: brown your chicken on the saute setting, add the rest of your ingredients, and cook. Finish it off with adding cheese on top while it’s still hot so you get that melty goodness, and add fresh guacamole, chives or tomatoes to really take it up a notch.

Instant Pot Chili

Any list of pressure cooker recipes needs chili, and we love this one that was developed specifically as an Instant Pot RV recipe by the travelers at Trekkn! For this one, you’ll saute your ground beef along with some of the veggies in the Instant Pot before adding your liquid and cooking. Not only does it make the perfect bowl of chili for chilly nights in the RV, but the recipe also includes a delicious chipotle crema to serve on top of the chili. It’s easy to make and balances out the warmth and spice of the chili perfectly.

Instant Pot Chili Verde

For a twist on a chili dinner, try this chile verde. Crafted by recipe developers who also happen to be avid RVers, you know this is an Instant Pot RV recipe that will work in your small RV kitchen. Kacey and Sarah at The Camper Kitchen took an authentic green chili recipe and adapted it to work in one pot so you can let it cook while you enjoy your time RVing with very little cleanup or effort. You don’t even need to brown the pork before cooking – just toss all the ingredients in and cook!

Instant Pot Mushroom Risotto

Mary at Cooking in a One Butt Kitchen is a pro at crafting delectable meals that work with little to no counter space, as her blog name implies! Cooking risotto can be a time and space consuming process, but she made it simple with this Instant Pot RV recipe. You’ll have to saute a few of the ingredients before pressure cooking the rice in chicken broth, but it’s well worth it for that fluffy, creamy, classic risotto taste you’ll get by the end.

Instant Pot Hamburger Stroganoff

Hamburger stroganoff is a classic family meal night meal, and we love this version that easily works as an Instant Pot RV recipe. Simply brown the ground beef on the saute setting, then add your broth, seasoning and noodles and pressure cook. Stir in the sour cream at the end for that irresistible stroganoff texture. Julie’s recipe does a great job of answering plenty of questions about substitutions and recipe adjustments, so you can shift this one to work with what you have on hand in your RV.
